Korean Skirt steak with the viral TikTok Ramen

This marinade for the steak is A-mazing! The papaya paste really tenderizes the meat and all the flavors works so well together. I decided to pair it with the viral TikTok ramen and boy was this a delicious meal. I did end up putting my own spin on the ramen by reducing the amount of brown sugar and adding the shin noodle spices it came with, and the result was fantastic. This is a must try and I’ll definitely be making it again! Pair it with a side of kimchi and it’s perfection with every bite.


Steak Ingredients:

  • 1 lb skirt steak
  • 2 tbsp papaya paste
  • 1 tbsp minced garlic
  • 1 tbsp ginger paste
  • 1 tbsp gochujang (Korean red pepper paste)
  • 2 tsp sriracha
  • 2 tbsp soy sauce
  • 1/4 tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tsp gochugaru (Korean red pepper flakes)
  • 2 tsp chicken bouillon powder (I used Trader Joe’s vegan chicken-less seasoning salt)
  • 1 sliced onion

Ramen Ingredients:

  • 1 pack of your favorite ramen (I’m using shin ramen noodle soup)
  • 1/8 cup brown sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp crushed red pepper
  • 2 tbsp soy sauce
  • 1/2 tbsp minced garlic
  • 2 tbsp butter


  1. In a bowl add all the steak ingredients and whisk well, then add steak and massage the marinade into the meat for about 3-5 minutes. Really get in there and make sure everything is coated.
  2. Add sliced onions and mix well. Cover with Saran Wrap and marinate overnight.
  3. The next day, heat up your cast iron skillet or your grill.
  4. Add some oil, sear meat on the first side for 3-4 minutes, and then 2 minutes on the other side.
  5. Remove from heat and cook the feast of the steak. Let it rest for about 10 minutes to lock all the juices in and then cut against the grain into strips.
  6. In a pot add 2 tbsp oil, and add all the onions from the marinade and caramelize them. (Should take roughly 5-10 minutes or medium low heat)
  7. To make the viral TikTok ramen, use your favorite ramen noodles (I’m using shin noodle soup)
  8. Boil ramen according to the package instructions, save 1/4 cup of pasta water, remove noodles and set aside.
  9. In a small pot add the seasonings from the noodle packet, soy sauce, brown sugar, crushed red pepper, minced garlic, onion powder, garlic powder and butter. Whisk well on medium heat.
  10. After 2 minutes add 1/4 cup of the reserved pasta water and mix well.
  11. Add cooked noodles and mix well.
  12. To assemble, add the noodles, some of the caramelized onions, slices of steak, garnish with sesame seeds, seaweed, green onions and some reserved oil from the caramelized onions. Enjoy hot with a side of kimchi!
